Black cumin

Black cumin is an annual plant which, before the arrival of pepper in Europe, was considered an indispensable spice in every kitchen. It is not related to caraway or cumin; in fact, botanically it is much closer to the poppy. It is considered one of the most medicinal spices in the world. Due to its sweet, rich and slightly pungent flavour, it has always been a very popular spice. It is used to enhance all kinds of dishes. However, it has much more to offer. It has a beneficial effect on the respiratory system, digestion, skin and hair, the heart and the nervous system; it lowers cholesterol, helps with asthma and allergies, and strengthens the kidneys and liver. Furthermore, it has antifungal, antibacterial and antiviral properties. It is also used to treat roundworms. Black cumin is also one of the most extensively studied plants, on which numerous clinical studies have been carried out, confirming its health benefits. The Egyptian pharaohs even believed it to be a cure for all illnesses. We Arabs, however, simply call it ‘Allah’s blessing’.

Uses

Black cumin contains a high oil content (primarily unsaturated omega-6 linoleic fatty acids, unsaturated omega-9 oleic fatty acids, and unsaturated stearic and palmitic fatty acids), eight of the nine essential amino acids, as well as other minerals such as calcium, phosphorus, iron, copper and zinc, and vitamins such as vitamins C, B1, B3, B6 and folic acid. When it comes to black cumin, the most well-known product is probably black cumin oil, a versatile and medicinal oil said to have been used as far back as ancient Egypt – thanks to its linolenic acid, which has been scientifically proven to have beautifying effects.

It is added to bread, such as Indian naan, vegetables, rice, eggs, pasta and savoury pastries. It also goes well with poultry. To season Asian dishes, the seeds can be briefly toasted in a hot pan before use. You can use whole seeds, or grind or crush them in a mortar. Only then do they develop their characteristic flavour, which is also somewhat nutty.

It combines perfectly with sesame and sesame-like seeds.

Black cumin can also be used to make tea, which aids digestion and treats bronchial inflammation. Similar to Greek hay, black cumin also stimulates milk production and relieves menstrual cramps. It is also used in the form of compresses or a solution to treat purulent inflammations and haemorrhoids.
