Aniseed

Aromatic aniseed is an annual plant from the umbellifer family, which grows to a height of approximately cm. It originates from Egypt and Asia Minor. It flowers from July to August, after which the seeds are ready for harvesting. In cooking, we use the seeds, which can be whole or ground.

It has a slightly sweet flavour, reminiscent of menthol. It is used in the pharmaceutical, perfume and food industries, where it is an ingredient in teas, liqueurs and sweets.

Uses

The small, dried, brownish seeds of sweet aniseed are used whole or ground. Whole seeds stay fresh for longer, whilst ground seeds quickly lose their aroma. If using freshly ground aniseed, care must be taken with the quantity, as the flavour is at least twice as strong as that of whole seeds. It is most commonly used as a spice and combines well with ginger, cloves and vanilla.

It can be used in the preparation of sweet pastries and bread, as well as apple and plum compotes and fruit salads.

It is also added to various vegetable dishes, sauces and soups.

Aniseed can be used to make tea, which aids digestion and also relieves digestive cramps, bloating and flatulence, as well as menstrual cramps. Crush the seeds slightly in a mortar before use. Drink it three times a day, preferably after a meal. It also helps to loosen phlegm in cases of colds and upper respiratory tract infections.

Aniseed is also used to relieve colic in babies, but always consult a paediatrician before use. For younger children, we recommend just one cup a day, and up to two for older children. When combined with other spices and foods, aniseed is also useful for increasing breast milk production.

Greenish-brown, pear-shaped seeds with light-coloured longitudinal stripes.

Water: 100 °C

Amount of tea: 1 teaspoon

Amount of water: 200 ml

Steeping time: 10–15 minutes

Number of infusions: One infusion.

Tea ware: Glass or porcelain.

Store in a dry, dark and cool place. Ensure the bag or box is tightly sealed.
